Well unless your using a hallow weapon base on luck, then its different story cuz I was able buff certant weapons to do bleed on it.

If your focusing on doing high dmg and bleed, pretty much its either thorn sword, notch whip, bandit's dagger, bone wheel shield (known as OP during DS1 because super powerful stun lock), and the full set thorn armor.

Hollow barbed sword with karthus and 40 luck bleed 2 or 3 hit. Against enemies weak against bleed you make them bleed in 1 hit, its really fun.

Kirk's Thorn armor set doesn't do Bleed Damage, it just does damage when rolling towards enemies.

I use a heavy barbed sword, which has bleed infusion by default. If I use Carthus Rouge, I see a huge difference.
