Without a joke response, I would say shield of want,the stability is pretty high for the weight and decent defenses all around.

Depends on what you are looking for.

Each of the Crest Shields has optimal defenses against a specific elemental damage and do not weight much.
The Shield of Want has good stability and average elemental defenses in addition to its special passive effect to gain more souls.
The Lothric Knight Shield has the second highest stability and has the best lightning defence.
The Black Knight Shield has the highest stability and the second best fire defence.

Knight Shield for 100% phys block and lkowest weight at 4.5.

All the crest shields have a "niche" purpose and all have 100% block at 5 weight. Except Grass crest which has 85% block, but has minor stamina gain to compensate.

Also the golden wing crest shield lets you parry spells. :)
