anor londo doesn't make sense
Like I compared anor londo from this game to the first game and anor londo didn't have that town under it. Also there was a bridge on the otherside of the elevator

Well. I wouldn't say that it makes no sense. The current guess is that the game is either after dark souls 1 or some time after dark souls 2 in the timeline, so some changes are present. It's normal if there were some changes. My guess why it is after dark souls 1 is for once that the giant is dead and the children of gwyn are also dead. Also it seems pretty rundown. If it was a century after Dark Souls 1, then it would be normal to have gone some kind of development. The area is pretty short, but it's not like it's unbelievable.

is not supposed to be an exact copy, neither is the same place, for instance in ds Irythill didnt exists and in its place there was instead just Anor Londo. It is all messed up and most of it doesnt make any sense despite people coming up with all sort of theories.

Time is convoluted... TL DR a lot of the geography and lore on these games makes no sense deal with it

All signs point to there being thousands of years between each game. A lot can happen. It's possible the entire rest of anor londo got completely rekt at some point, and that one part is the only thing that remained, and then some folks started building a city beneath it. I mean damn, do you know how long it takes for a city to go from being on the surface to literally under the ground in caves? And that has happened several times in the series.

Anor Londo still existing makes sense since Gwyndolin is still alive in DS3, but obviously in the process of being eaten by Aldrich when you fight him. You can clearly see him as well when he fires his bow (which you can make from the boss soul).

With this information we can safely assume that Gwyndolin has been protecting his ancestral home along with the Blades of the Darkmoon and the Silver Knights. But we seem to show up when there are no Blades left except Sirris and Yorshka, and when Aldrich is devouring him. Probably a good thing we caught Aldrich in the middle of it otherwise he would have been a near impossible fight as he has devoured every other living God of the world apart from The Nameless King, Gwyn's Firstborn.

i know this is a necropost but the anor londo of dark souls 3 is possibly an illusion by gwyndolin

Gwyndolin is practically dead, thus, in DS3, Anor Londo can't be his illusion. But, as someone else pointed out, it can be in DS1. But it's also possible that it's not an illusion, geographically, especially because thousands of years passed, or even a lot more since DS1, it's not inconsistent.

Gwyndolin manned up since DS1 and stopped hiding in a wardrobe pretending to be his big sister. Then he built a big magnificent city around the old cathedral, and it was glorious. Then Sulyvahn ruined everything cuz he's a jerk.

Depending on how much time has passed since the happenings in DS1, I would say it's no issue to change the city as we see it now in a couple of hundred of years. Anor Londo was way above ground in the first game, so I see no issue in the changes...although, I would have loved to fight my way through a village as seen in DS1 Anor Londo to get to the Cathedral, rather then Pontif boring pvp area town.
To me anor londo in this setting seems largely abandoned and "overrun" if you will.

The fact it's still standing at all speaks volumes of how ♥♥♥♥♥♥ that place became.

You can see where Aldrich got in. There's a trailer of slime leading to his boss room.

Are we not going to talk about the fact that Anor Londo's cathedral/castle is much smaller in comparison to DS1? It's almost like an entire journey to get from Gwynevere's Bonfire to the Favor Set, but it doesn't take much effort to run to the same points in 3.
