They then pass their sword on to Ludleth and go on their way. I don't see how that infers they went hollow.

he goes back to horace shrine (smoldering lake where he is first found) and there you have to fight him as he is hollow. You can also go earlier at the shrine as long as you tell him about smoldering lake when he stands near the bridge and you will find the shrine he builds for his friend, very sad story.
