learn to recognize his different attack and get comfortable with your dodging, the first step in beating any hard enemy in ds, is making it so they can't kill you.

The slow moving boss in Dark Souls 1 is so easy compared to the fast and agile one in Dark Souls 3.
No, I didn't get stuck on the first boss and beat him on the first try too as an Assassin.
Then I tried to fight The Master and got ButtF'd a few times before giving up. But I used the same strat to beat Vordt on my first try, as well. But the knights were f***king me up for a long time before I got to him.
Rolling is your primary defensive action in DSIII, and to be decent at the game, you have to learn to time them properly, and in the proper direction.
Time your rolls to coincide right when you think the weapon is going to strike you. You'll be punished for rolling too early. Your goal, usually, is to end up at their side, or behind them.
If you're hurt - don't panic! Wait for an opening, such as when the boss does an attack you recognize that has a limited range or a predictable direction. Heal then, and then resume combat.
Get in one or two strikes at most, and then prepare to do more dodging. Don't get greedy with your hits.
Playing DS requires a certain rhythm to it, which you learn slowly over time.
