What's a sorcerers offhand supposed to be?
I know you have the staff but I don't know if your supposed to use daggers, katanas, shields, or just duel wield the staff. I understand the answer probably differs but I want to know what's best for a pve run. Thank you 4 helping :3

small shield, so you can parry people who get close, I'd say. there's a nice pretty one in lothric castle that can parry spells as well

also, you might wanna consider using a hybrid catalyst/melee, gives you some more versatility

Use the staff as offhand weapon so you can make full use of your melee weapon.
The choice of weapon is something personal. You need to like the move set and have good demage. Or you go full cheese and Estoc

This is likely the best call, Speaking from experience for a more well rounded character. I keep my talisman in my 2nd left spot by my shield, and have two complimentary weapons for my right. But for a full time sorcerer, my first suggestion may be worth a try.

Whatever you\ll decide to have in your offhand , don't forget to put there scholar candlestick or whatever it is called.

+20% spell damage

You don't even have to meet its requirements.

I use the catalyst on my offhand, but I like to keep one on my right too, for when I want to enchant my shield.

Right Hand:
- Catalyst
- Sword
- Dagger

Left Hand:
- 100% Physical Shield
- Small Shield

Yes, it will weight a lot but it's the best there is.

I have staff, bow, and shield on my left. Sword, pyro, and talisman on the right.

I cast from the right so I can keep my shield. I can't cast and swing at the same time so I don't need the catalyst in my left hand, but I get why people do this if they are more offensively minded.

I thought you'd want the candlestick in your other hand for the spell dmg boost?

That or simple Caestus for FP regen.

Obviously what I'm about to say is invalid if you are pointedly trying for pure magik, but the staff IS supposed to be your offhand.
well it really depends what your preferences are in that point. stroking the staff in the main hand might give you additional power, but could lead to unsatisfactory results, whereas putting it in the offhand can gain you long term satisfaction but might tire you out faster. some people might even 2hand it but i really dont think that it is that efficient. my advise would be to alternate the staff hand and compare different results.
