Camera broken.
It's impossible to not lock onto boss because camera automatically tries to move away from what you try to look. If I run around the boss it was easy to keep boss on centre of screen in ds2 but here you run out of mousepad regardless of settings. Is there something I can do to fix it? The camera is harder boss than anything else they put in the game.
If you try to keep something in centre of your screen you will get shaky and glitchy camera that tries to "fight" you. Did they realise in the end their bosses were too easy so they decided to ♥♥♥♥ you in ass with camera?

Definitely occasionally camera issues. I haven't played a 3D game that had a satisfatory camera though... doesn't mean it is acceptable.

DS2 had no problems. I like to do stuff in hardest settings of game and I use techniques that require no lock-on. DS3 Doesn't allow manual camera control and it already has severe camera issues on some bosses that could be fixable with working manual camera.

I do manual camera control - same as in all the other Souls games.

What in the world are you talking about? You control the camera with either the right stick, or mouse. In at least 1 of those situations you have to click it to lock...

Locking worked better in DS2 because the bosses were all just dudes in armor, and not overly large most of the time. DS3, just like DS1 and Bloodborne have much more creative boss designs that don't always play nicely with the camera.

I'm talking about non-locked state of camera. You don't have to lock-on in DS2 and only reason you have to lock-on in ds3 is because camera automatically pivots in direction you are facing too much.

My problem precisely is camera control in non-locked environment. The difference is fast and easy to test by launching SOTFS. Killing boss like fume knight with dark souls 3 camera control sound nightmare if you don't use lock-on.

This has nothing to do with how bosses look like or worked in ds2.

Trying turning off auto-lockon.

Tried for sake of it but it doesn't affect the problem with ds3 camera. I also tried auto-targeting on and off.

If you run sideways and try to keep camera in 90 degree angle the camera force pivots to direction you are running. This was mild enough in ds2 which allowed you to keep that 90 degree angle.
