How to stop casting spells and
DODGE!!!?

You can't cancel spells. It's a pain in the ass. I think some of them you have a tiny tiny window to dodge right when you start. Essentially don't start casting spells in melee range unless you have an opening.

You should be able to start them then dodge immediately to cancel, it's a pretty small window though

Thats "special education", even for this game. At the second boss and can't cast spell without getting hit due to the op casting times. I thought playing depraved was bad at the start.

Just wear the sage ring and be careful. Casters require a good bit of timing. Maybe get a phantom to tank. Also, pump your casting stat hard. Sorceries, for example, are ♥♥♥♥ until 50 int and incredible by 60.

Just raise int and attunement if you want slots and mana, plus the basic stats for life and whatnot. Dex gives a tiny cast speed boost and let's you use more weapons, but you can also get that speed from the sage ring. Find a weapon you like and infuse it with crystal, or raw if you like buffs. There is a scholar's candlestick that you shouldn't bother to get the minimum stats to wield but hold in your other hand whenever you cast spells for a damage boost, and the crown of dusk should always be your helmet. Not the best for fashion souls but it's a straight damage boost. Honestly found that I never even had to bother with melee when my int was high enough to get non terrible damage on spells. Heavy great soul arrow will destroy enemies and bosses, and soul stream is quite possibly the greatest spell in any souls game.

Well i beat him, took ages useing soul arrow and playing it way safe.

Oh, you'll be using plenty of melee. It just becomes less necessary later on. It's still good to have a backup, too.
