Haven't beaten the game yet, but from the first game. As soon as i beat it my character was thrown into new game plus. So i think you can keep going with one character.

No your character keeps all your items and equipment, only key items will be removed.

The only thing that resets are all your keys. You keep all weapons,armor sets,levels, and souls

I'm having a hard time through the game, still with the first armor I got in the game and Im at the road of sacrifices, can't get rhough it.

Another thing to take into account is that if you are at lower equipment load you will recover stamina faster. You should also make sure you don't go over 70% equip load because your dodging becomes really bad. Some other things that make the game easier is to have a 100% physical blocking shield with reasonable stability (50+) so you can block occasionally. Faster weapons also make it easier to strike enemies before they strike you.

As explained above, you get 1 soul per boss kill in your own world and they don't respawn till you beat the game and decide to go to NG+. It's optional, the game asks you after the credits and you can say no. When you decline you can still go NG+ at any time from the firelink shrine bonfire.

Have you tried the code thing for summoning, I heard that it doesn't matter what difference in sl you are then. You would probably need to be friends though.
