And estoc is a busted weapon. Avoid being one of the trash players who abuses it before it gets fixed. If you want a fun experience instead of an easy one anyway.
The Cathedral Knights are the true kingpins imo, at least the mofos with UGS, infite stamina, and infite poise. Though yeah, some of those redeye knights in the Castle can be a pain.
Just focus on drawing out/killing the spear knight before the sword one walks up.
srsly tho, those cathedral knights outside Oceiros. No ♥♥♥♥♥♥♥ mercy. Can't imagine what a pain in the ass they are to STR builds.

Pain and suffering as a Claymore build. I feel as though they're baiting me to try and shield swipe them, only for the Cathedral Knight to drop his block and wombo-combo me.
That being said, Silver and Black Knights are push overs compared to Lothric and Cathedral Knights.
Stay medium distance away from them, just the right length to bait their light attack. They often do a two slash then stab (light) combo, which is your cue to set up the kill. Either block or step just out of range of the first hit, then either parry or roll through the second hit. If you roll through it (by rolling into and behind them, not sideways, so that you end up just behind their backs), chances are they will follow up with a stab that will miss you completely, setting you up for an easy backstab. This is why the medium distance is important, if you're too close you will roll too far behind them to turn around and get a backstab in before they finish their stab and shield bash you or something. General rule is to be just close enough that they attack, and just far enough that if you step back a little their attacks will come short and miss (this goes for all medium range weapons) unless it's a lunge attack.
Spear guys (big shields):
Parry them (in DkS3 it's usually best to parry the second attack if it's a light combo - learn the combos, bait the first hit of a combo and parry the second hit) ... but the undisputed best way to deal with any spear guy that hides behind a shield in this game is to kick them, which nets you an easy crit. This is especially effective against the Pontiff Knights as well that like to hide behind their giant kite shields all day.
