Overall best med shield?

Or "standard" shields as they are called...Mind you i do not care about parrying.

The Grass Crest shield, because it gives you extra stamina recovery.

Some sources online say that it does, however I can't notice any difference between using one or using both.

If you're looking for a simple 100% block, I'd say use the lightest one you have that has the block % you need. My preference is the Shield of Want, not the lightest, but for PvE you get more souls and it does Weapon Arts instead of parry.

Bah, Grass Crest is fine if you are going to 2h your weapon. The defense on it is too low to not be pushed aside by other shields, eventually. So I suppose it would depend on your use of a shield.

You might also try adding a Blessed infusion to a shield and net yourself some HP regen
