And I think most people can probably confirm that this is true.. You evidently got something different, but like I said it might be that specific item.
If you have been doing Siegward's questline and gotten him out of the well then you can rest at ease that Greirat will survive his trip to Irithyll of the Boreal Valley. However, if you have not done the first part before, then yeah, he's dead and you'll find his ashes to give to the Shrine Maiden when exploring Irithyll.
ANY person can change ANY thing on ANY wiki at ANY time. You do understand that right? I've written quite a few things in the wiki myself already for DS3 because I had the japanese version early.

The wiki must just be incorrect, whatever you get from the birds even for the first trade, is entirely dependent on what item you drop. Each item you drop turns into a specific item in return. Video proves this 100%.... Not to mention the list I linked to you earlier. My first playthrough I traded the Siegbrau first, this time I traded a firebomb first. That's two different items traded first with no gestures being received. I did get a gesture for the homeward bone so that must be it's specific trade.
Every Souls game has been this way, not counting DS2's ridiculousness... The wiki is just wrong.
yes he dies in the moon city you can give his ashes to the merchant lady and she sells the suff you unocked for him the next spoiler has his location.
his body in in the sewer like area with all the spider ladies befor you get to the prison. in the back corner
