Can you get more than one stray demon soul? (minor spoilers)
I want to get Havel's Ring and Spew Boulder but they both cost a stray demon soul and I only have one.

Go NG+ after you finish the game.

That won't be for a while... Do you think that the pyromancy or Havel's ring is more beneficial?

I always get havel's ring, it's pretty useful. Couldn't tell you about the pyromancy, I've only done physical builds so far

The pyromancy is actually really strong. I used it when I first got it when I was building a quality build and it still did ~300 dmg (agaisnt mid-tier enemies). However if you're going to be using heavy weapons or armor the ring is a must because you get almost no equip load from vitality in this game.

Right now i'm at a weight ratio of 32/60 for a weight ratio of 54% and I don't plan on increasing my vitality much more if at all. Do you think Havel's ring would be worth it since it will last me longer into the game than the pyromancy?

I'm not sure. I don't think that the boulder toss counts as fire damage, but strike damage (haven't confirmed but it was doing more damage to the jailors in Irithyll Dungeons than to armored enemies, so I'm assuming it's physical), but most of the enjoyable weapons and cool armors will weight significantly more. It only takes about 30 minutes into NG+ to get to the Stray Demon again though so you won't be taking much of a hit if you choose the wrong item.

Are you going for the achievements? If so you'll need both eventually anyway.

No, but I was planning on getting both eventually anyway.
