I'd go with this.
Undead have two outcomes: Hollowing and true death. Hollowing occurs when you lose your humanity. Whether you truly die in this case is up to debate, but based on the examples we're given (like Horace) that seems to be the case.
The 'curse of undeath' as its called seems to end once an undead fulfills a purpose, in the same vein that a ghost has 'unfinished business', the purpose is what keeps an Undead going and aids them in maintaining their humanity.
While it's never explicitly stated, my speculation is that Andre sees himself as the smith to those that kindle the flame, and thus will never die while the age of fire persists.
This sort of rounds back to the player in DS1 and 2. We are, after all, an undead, and no matter how much we die we keep coming back, until we quit for good, losing our purpose. :P

What about the big giant guy in Anord Londo? Looks like something awful happened to the giants. But they are not the barbaric golems from DS2, they are something else. Haven't read stuff about the lore yet but this is strange.

Only humans can become Undead, since they're affiliated with Dark. Since Giants can't get the curse, they're mortal. Not sure what happened to the rest of the giants in Anor Londo, but it might have something to do with Gwyndolin dying and Aldrich moving into the cathedral.
In DS1, 2, and 3, all my main characters were sorcerers named Aleister ¯\_(ツ)_/¯.
Oh i see, completely forgot about the hollow curse.
Maybe Aldrich ate their souls. I don't know what they are all doing in Irythill . Maybe they actually worked for the Lordran kingdom? The blacksmith was apparently living with all the knights around him. And the big place within the Cathedral is obviously built to cointain giants, a bit like if they were pets or defenders.

My guess: Giants are a race native to Lordran/Lothric, and they're usually kept as a slave class due to low INT and high STR. A few of them can be "civilised" though, like the Smith or Gough, but even as a Knight he was discriminated against.
