Leave it to Siegward to discover a drink that even an Undead can enjoy. Perhaps his long years spent Undead have left him wanting to drain a cup or two and revel as if he were still among the living.
We could assume that this means they generally do not get any kick or taste from normal food apart from Estus. Then it would be pretty normal for them to create food using it as a base ingredient.
EDIT: I know, I am so fun at parties...
For the undead? Probably... For normal people? Who knows... I don't think there is a recorded description regarding a human that wanted to drink Estus. For all we know it might be poisonous or taste like ♥♥♥♥... or both. Maybe drinking Estus is what turns you into Undead?!
Nah, they are. Just not the usual Undead.
