Usually I kill him in the undead settlement before I cheese my way down there to save Irina.
He's just stuck in a ♥♥♥♥♥♥ situation and lets it affect his attitude.
I actually like him a lot because he parallels Garl Vinland from Demon Souls.
Sure killing him has no negative effects, but you miss out on his story.
Carim Knights are sworn to protect one, and only one maiden like Mourne served one goddess, so obviously Eygon and Irina share a special bind.
With the outbreak of the Undead Curse, Irina sought ways to ease the suffering of the undead, so she decided to venture to Lothric and become a Firekeeper, the one individual who helps and cares for the undead more than anyone else, after all they tend to the Bonfires, and we all know how important those are in our journey.
Eygon most likely thought this was a foolish idea, but went along with her anyway.
He was a knight of Carim and he vowed to serve his maiden.
When Irina failed to become a Firekeeper, she had Eygon promise to kill her (you can find this out when she falls to darkness, and you touch her wearing Eygon's gloves), since the process cost Irina her eyesight and forever cursed her with the darkness of humanity crawling underneath her skin (an unpleasent feeling I can assume) it would be an act of mercy.
Yet, Eygon cares for her too much to actually kill her, so he locks her up and sits outside, weighing his options. Obviously this is when you come along.
The Unkindled's touch helps the humanity settle inside Irina, and she then goes to Firelink Shrine to re-pay you.
Eygon obviously has mixed feelings about this. On one hand you helped save her, but on the other, now she's trapped at Firelink without purpose. Best he can do is help you so long as you keep Irina safe.
Eygon will occassionaly check in to see how Irina is doing, since he's very protective of her.
If you've had her read a Dark Miracle, the humanity will unsettle once again and start to cause her pain. To prevent this from getting any worse, Eygon rescues her from you, a source of her pain.
While Eygon is at Firelink, he sees the Firekkeper, which sets off some jealousy and contempt within him, since he feels Irina should've been the Firekeeper, not the current one, which is why he bad-mouths Firelink Shrine and it's inhabitants.
If you have Irina read to you all the Light Miracles, she'll move into the tower and finally become a Firekeeper like she always wanted to be.
What's joyous for her, is depressing for Eygon. He was her knight, and he was to serve her and help her become a Firekeeper, but he failed, and now that she's a Firekeeper he'll never see her again.
He's a knight without his maiden and without his honor.
So, Eygon ventures back to the cell where he kept Irina, and commits suicide not being able to bear the thought of failing and never-seeing Irina again. However, the one solace he has, is that you helped her become what she always wanted to be; A Firekeeper.
I also like to call him Aegon of carim........idk.....maybe that's because I'am a ASOIF nerd xD

Well damn, now I feel bad about killing the guy.
Thank you for pointing this out though, it's actually a pretty cool story, I think, now that I see it in perspective. Certainly makes him a lot more enjoyable as a character, knowing that he looks and sounds sinister on the outside, but he's actually a good person inside.
To add to that. She doesn't become just "a Firekeeper", she becomes an already failed Firekeeper. The tower is meant for the Firekeepers that are already expired so to speak, and they go there to find their death.
Eygon has no more purpose at that point. He technically has completed his duty, but Irina is a goner anyway, behind a different door that will surely be her grave. He goes back to the cell at the Undead Settlement, where you met him for the first time. It's possible that there he wonders if he did the right thing, letting her go, but it's too late now. What's done is done and he cannot undo it, so he choses death instead.
EDIT: Even Irina sounds tired and... disappointed so to speak after that. She is no longer excited to see you, as if something happened to her.
