At least, that's what I understood.
By letting Yoel do as he wishes, we get a Dark Soul again.
Hollows lost their sanity, their souls, everything that made them a person.
Simply being undead does not mean you are hollow.
It is sort of implied in the change from being called "undead" to "Unkindled" that the current undead are somewhat different than the ones in Dark souls 1.
I would go into a whole lot more detail if I wasn't so exhausted.
So in short, all hollows are undead, not all undead are hollow.
Which turns into a giant fire tree head so can we really trust that guy ?

I don't remember that particular dialogue, in addition to that aldritch were not in Dark souls 2, Aldia were however.

So you can take from that the reason we don't hollow when we die is because we are simply not...human i guess.
Miyazaki also explained in an interview the difference between unkindled and the previous players who became lords, which was simply that, "unkindled ones" are undead that failed in their mission and quite literally turned to useless ash.
Whatever we had when we were human, we probably lost it.
well...you did brand yourself with marks to be hollow :3.
I really have no idea if what I did was good or bad.
Edit: Also worth mentioning, in Dark Souls 1 and 2, you could hollow, look like bacon but people still regarded you sane, because you obviously were still sane, despite being near the edge.
