Because we don't have a Dark Soul.
At least, that's what I understood.
By letting Yoel do as he wishes, we get a Dark Soul again.

There is a huge difference between a hollow and an undead.. The player is an undead, more specifically unkindled, they are however not hollow..
Hollows lost their sanity, their souls, everything that made them a person.
Simply being undead does not mean you are hollow.

It is sort of implied in the change from being called "undead" to "Unkindled" that the current undead are somewhat different than the ones in Dark souls 1.

I would go into a whole lot more detail if I wasn't so exhausted.

So in short, all hollows are undead, not all undead are hollow.

I would generally take dark souls 2 lore with a grain of salt to be honest, it was extremely incoherent.
I don't remember that particular dialogue, in addition to that aldritch were not in Dark souls 2, Aldia were however.

We only become hollow when we let Yoel infect us with the dark sigils.

The darkness of humanity seeps from this bottomless pitch-back hole, the gap filled by the accumulation of the curse.

So you can take from that the reason we don't hollow when we die is because we are simply not...human i guess.

Miyazaki also explained in an interview the difference between unkindled and the previous players who became lords, which was simply that, "unkindled ones" are undead that failed in their mission and quite literally turned to useless ash.

Whatever we had when we were human, we probably lost it.

Also, Yuria, Anri and horace are hollows. They are sane as far I know. If you attack Yuria, she says that a hollow doesn't have to be mad. Also, if you check the description of some dark miracles, the ones that come from Londor gives the idea that are hollows using them and that are salvation for them and stuff like that.

If you check the description on the two rings that Yuria sells it mentions the undead from londor are basically hollow or hollow'ish in appearance.

You didn't put out the fire, per say, you stole it, Yuria said that the Gods used the fire's power to make their age of fire, right? So their logic was to make you a vessel for the fire and make their own age, the Age of Hollows, using the power of the fire.

Edit: Also worth mentioning, in Dark Souls 1 and 2, you could hollow, look like bacon but people still regarded you sane, because you obviously were still sane, despite being near the edge.

Maybe so, but the thing is, there's no dark lord, at least it's not your character in this ending.
