Basicly it comes down to what weapon art you prefer. Both can be pretty useful.
Quickstep is pretty good, too, though. I'd pair Manikin Claws with Ironflesh and a VIT-heavy "tank"-build.
don't use iron flesh if they have a weapon with innate lightning damage, or use gold pine resins, or are a faith build.
seen a bolt do 2k+ damage to someone with iron flesh up, and my lothric knight GS with gold pine resin did a ♥♥♥♥ ton of damage (2 hit kill) to someone that had about 120p health when invading.
