DkS 1: Firelink Shrine, Gwyn's theme, Nameless Song, Artorias's theme, Nito Burrito's theme, Sif. These are good themes, bad examples are rather forgettable things like... I can't remember.
DkS 2: Sir Alonne and don't listen to DkS II themes much.
DkS 3: Abyss Watchers, Vordt, Sulyvhan, Lorian and Lothric, Soul of Cinder, Yhorm the Giant.

I think Kitamura did a MUCH better job than Sakuraba with the music, not that that is the subject here.
Dark Souls 3's themes (base game) are far superior to Dark Souls 2. The DLC tracks of DS2, some of which are done by Yuka Kitamura as well, are much better than the main game, and on par with those of DS3.
I love listening to the souls soundtracks, and 3 was not a disappointment in this regard.
Also, Dark Souls 1 is much better than Dark Souls 2 with the themes. Far fewer 'epic' scores, with Kalameet being the best among those. However, it perfected the emotional aspect of every fight with the music.

These are all amazingly crafted pieces, that properly evoke the feelings FromSoft want the players to feel.
A lot of DS2s tracks feel like they're just noise to make the fight more tense.

These are my favourites from DS2, and they're really good, but still - the vast majority of DS2s soundtrack isn't as good as that from the other games, in my opinion. For DS1 it's the emotion, and DS3 has the proper mix of epicness and emotion.
DS2 tries to go for epicness, and lacks anything else, making many of its tracks just background noise that doesn't actually sound that good.

Listen to Sinh's theme, then listen to Kalameet's theme. Sakuraba just copied it, and added some bits.
