Gundyr is there to test you. At least in our first fight, in the second encounter he has red eyes in his second stage. And in world of Dark Souls - red eyes mean bad stuff: that the person is corrupted by the Abyss (3rd abyss watcher for example). So probably went insane.
Nameless King is either hollowed or he just really doesn't like you. Or maybe you literally called him out for a duel with that bell. Basically an epic way of saying "i'm gonna rekt ya mate, swearin' me mum!".
