DS2 is about breaking your Undead curse.
DS3 is about getting the Lords together to link the fire.
DS 2 is side story (About the cursed one that want to be free from it curse & the story of how the demon come),
DS 3 is the Epilogue (Not quite the story ending but option either you become the next Soul Fire Lord or you end the Fire power).
DS3 shows us the world after hundreds, if not thousands of years of the fire being linked time and again. Prince Lothric, who was destined to link the flame, refuses to become a lord of cinder and as the Unkindled One we must gather the ashes of lords past to link the flame ourselves. Seeing as this is the last game, whatever you choose to be the ending is the real one.
Now, the story runs way deeper in both games, but I'm no Vaati. You should go to his channel to learn more about the lore in all of the DS/BB games.
