Even knowing it is coming it is really hard to evade because you can roll and she'll just spin around and catch you with that two part attack anyway.
Maybe I just don't have the timing on it down yet. Or maybe it's because I'm playing on New Game++ but this is the only boss in a while that I'm having a hard time soloing.
Quick tip- stay close to her as much as you can. When she goes invisible, you can still see her when you're nearby.
That said, as soon as she goes invisible she'll jump to a different location so if you're close you can actually see the direction she moves too- follow her, find her and hit her, this completely negates the invis attack as it knocks her out of stealth immediately.
Appreciate the tip. Just managed to beat her by a combination of being ultra aggressive in the first phase to defeat her invisibility, ignoring her completely in the second phase in favor of lighting attacking father and then continuously going for the backstab and trapping her back against a wall in the third phase.
Probably a bit harder than it otherwise might have been given I'm playing on New Game++ but I finally managed it.
She's definitely one of the tougher bosses in the series. Died more than a few times on her.
Another tip that helped was going in unkindled and using an ember for extra healing in the first phase to conserve estus.
If you watch her animation you can see the direction of the jump, but easier yet you can see where she lands as she raises dust (and even breaks object).
You can catch her in her chargin animation and stagger the attack.

For extra context on my previous post it took me something less than 20 minutes to get her. Got to phase 3 only in first and last try, curiously.

Oh it's been already said, should have read to end.
Father Ariandel in particular is obviously meant for heavy weapon characters to fight, so focusing on him during the second phase makes the fight a lot easier.
Giant mutt boss seems more annoying. Reminds me too much of Sulyvahn beasts aka the-camera-is-the-real-boss-you-can't-see-wtf-is-going-on-with-this-giant-ass-on-screen-and-crap-everywhere.

Game, you gave me buffs to use. LET ME USE THEM. STOP GIVING ME MULTI PHASE BOSSES AND THEN NEVER GIVE ME AN OPPORTUNITY TO RECAST.

Requires 19 STR, 11 DEX. At +10 it has C scaling for STR, D scaling for DEX.

It's a quality weapon, you dummy
- Phase 1: Stay at range, wait for the invisible jump, track her down looking where the snow flies to (reminds me of crossbreed priscilla, where you had to use snow to see her paws), you can see where she goes and smack her before she can do the grab. I didn't get hit more than once if I was very sloppy, or if I would stay in melee to her combos, quite a mixup.
- Phase 2: Basically focus fire the big guy, backstab her when she tries to heal, critical hit the giant once you stun him. Easy game.
- Phase 3: Pray you don't get hit by the snake + combo, or the crash + followup because those are pretty close to instakills. Pound her as soon as you connect a hit.
Pro tip: The helper phantom is only good if you aggresively help him, don't let him tank damage if you can help it.
Phase 1 and 3 are just about learning her patterns, very much a typical challenge for the series, albeit one that requires better timing and endurance than 99% of it.
Phase 2 can be nasty, since two bosses always have the chance that their patterns will overlap badly and put you in a position where you can't possibly evade. That's where the NPC phantom can come in, let him distract Friede while you go 100% aggression on Ariandel. The NPC won't survive the last stage so will probably make it harder, but if you do a bit of phantoming for others you can get a lot of free observation on all her moves, once you've seen her do them a few times from different angles you'll realise they're a lot easier than they look to dodge.
But yeah, I'm not sure if this was the best boss fight in the series, but it's certainly right up there with the best. Extremely difficult without being cheesy or unfair, fantastic animation (I just wish the player could do even half of that ♥♥♥♥ with the scythe) and again some nice evoked memories of DS1.
