Ultra Greatswords are insanely powerful and have slow attacks. They also have poise, which allows you to take an attack but keep going through with yours.
Hollowslayer Greatsword has a unique moveset when twohanded as well as poise. It’s also great in PVE, where many enemies are hollows. The sword lives up to its name and does extra damage to hollows (doesn’t work against players).
You left hand should be whatever you want. I carry a medium shield usually, since they commonly offer 100% physical defense and are relatively light. On another build, I carried a Blessed Caestus for regen and faster attacks.
Alternatively, you can carry a light sword or dagger for fast attacks to deal with rolling. Curved Swords, Straight Swords, and Corvian Greatdaggers are good choices.
And yea in pvp UGS most good players will dodge everything.

Sword sounds good. I just saw a Midirkill w/o blocking/rolling etc. and now I'm trying to limit myself, which means sword. But what do you mean with faster attacks with the Blessed Caestus?
Caestus mainly are useful for faster parrying, and having them Blessed gives you HP regen even while you're twohanding the Hollowslayer.
If you wanna try a fun underused build, try dual-wielding dual weapons (e.g. Sellsword Twinblades + Onikiri & Ubadachi) - you can dual-stance either of the weapons at the press of a button, so this gives you access to 4 movesets at a moment's notice.
