Edit: I also use hallowed because it allows for buffs/resins so I can adapt to any situation. With blessed weapon, bountiful sunlight, and if I swap a ring for the sun priestess ring I have very high regen and it is actually quite difficult to chip me down which assists when being honorable and not using estus recovery.
You have 30 attunement which implies you are trying to use multiple different faith spells, but you only have 35 faith. This means that the buffs are going to be pretty much non-effective in terms of other builds, and it reduces the effectiveness of your build overall. My advice would be to drop down to 15 faith since it gives you access to blessed weapon, replenishment, and ToD, you sacrifice Sacred oath, but with lothric war banner it doesn't really matter.
This also means you can move your attunement down to 24 or 18 since you don't need as many spell slots. I would put the points from attunement and faith onto luck since you're using hollow weapons, and they scale with luck.
Edit: I don't really know why but I would rather rescale to miracles rather than the bleed.
I'd just drop the luck and the bleed build idea on a cleric..
I also had a blast with my faith/tank build. For it, I used a blessed mace two-handed, with a blessed caestus off-hand (for the regen), and would use both "Bountiful Light" and "gentle prayer". Then Don the heaviest armor you can find, and with the mace's "perserverance" WA you can plow through most enemies in the game. I remember taking down the princes this way, just R1 spamming.
I third thing you might want to try, is getting base stats for the dragonslayer axe, infusing it with raw, and buffing it with lightning blade. It's brought out some of the highest DPS I've seen in DS3.
Chaos damage is split whereas anri's sword not only has a passive heal built in, you can buff it with lightning for nearly 600 AR. With 6 swings and 50 luck, you'll be getting a decent passive heal; Particularly if you stack it with other heals such as chime and bountiful sunlight. Combine carthus rouge and Anri's sword and you have good bleedout with 50 luck. Deep protection allows for good stamina regen and so does chloranthy (iirc from ds1) Other rings boost offensive miracles, so I added them in along with more lightning. Based on the +10 Ashen Flask, you can heal to nearly full with 30 attunement. I figure if he wants miracles and bleed, he can have them in spades along with decent physical.
