Yeah, he was becoming similar to Manus. More interesting thing to think about would be connection between darkness, humanity and hands. Manus does mean hands in latin, and manos means hands in spanish, we can find an enemy called Monstrosity of Sin in ds3 which is a hand monster, and Manus has an oversized hand.

There's a thing called "going hollow" in dark souls. There's many beast-like humanoid enemies in the games and none of them consumed the dark soul.
Want proof of gael being hollow in the 2nd phase? In that phase the hollowslayer greatsword deals more damage to him.
True, he probably did go hallow, but I'm wondering if it went beyond that after consuming it. Introducing a new kind of madness associated with blood. I only say this because blood hasn't really had any significance in the Dark Souls series until this is introduced. The two games most likey aren't connected, it's just fun to think about.
