I am completely lost in Irithyll Dungeon
I do not want to look it up and prefer if somebody could give me a hint. I've gone through the whole entire dungeon and went in a circle/loop 50 times trial and error every room. Everywhere I go I keep looping back to where the giant was at (before I killed him) with rats spawning below him. I feel like I am missing one room or something.

Also, those Jailors with the lanterns and heat stick things are scary and op. I walk through them and my entire health gets drained. >.>

I swear I've opened every jail door as well and don't know where to go.

Please help - A lost Ashen/Unkindled/Undead (I don't even know who us the players are)
Are we all those 3? Because Elden Ring = Tarnished.

I found the solution! I climb the ladder after passing the stone flying bird w/ a spear to the next bonfire. What happened was I kept going and passed the ladder. Doing that led me back to the giants room which kept me looping in a circle.

Dark Souls 2: Scholar of the First Sin - Bearer of the Curse, an Undead
Dark Souls 3 - Ashen One, an Unkindled
Miyazaki didn't explain the differences between an Undead and Unkindled ones, but, they are the same. You play as the Ashen One.

Both Unkindled and Undead slowly turn into Hollows

Use ranged attacks on Jailers if you have trouble. Any bow or crossbow will do.

Poison or Toxic mists are also effective.

If you killed giant, to the right from there is sort of bridge you can cross where pickaxe is.
Proceed there. Be prepared to the lot of rats, Basilisks and eventually Jailers.

You can also jump down to the bottom where giant was standing.

Lots of rats there, as you mentioned, but you can unlock shortcut to the bonfire.
One final advice about Irithyll Dungeon. "Be wary of mimicry, monster" :-)

There's a spell that make you invisible to enemies and another that silence your steps and reduce fall damage. You can get both to work with 15 intelligence if I remember well. This combo (that you can "improve" with the ring that extends the time your spells last found in the swamp after you defeat the only giant crab there is there) will allow you to explore areas much more relaxed. I FOUND IT, Its the one bridge to Profaned Capital and the one stone flying bird with a spear jumps in front of you. You pass him and then you climb a ladder to the next bonfire. Wow.....

For me, I kept going and passed the ladder to the SECOND stone flying bird spear and doing that looped me back into the giant. Thank you for all the help!

Never knew that, I will level intellect whenever I can, so far I am going mostly vigor and dex.
