Miyazaki didn't explain the differences between an Undead and Unkindled ones, but, they are the same. You play as the Ashen One.
Poison or Toxic mists are also effective.
If you killed giant, to the right from there is sort of bridge you can cross where pickaxe is.
Proceed there. Be prepared to the lot of rats, Basilisks and eventually Jailers.
You can also jump down to the bottom where giant was standing.
Lots of rats there, as you mentioned, but you can unlock shortcut to the bonfire.
One final advice about Irithyll Dungeon. "Be wary of mimicry, monster" :-)
Now, to put you in the right direction:
Starting in the giant's zone, go to where he was resting his arms the first time you found him, or climb a ladder to get there if you are where is feet (and rats) where. There is a crack in the wall if you follow the wood floor, with more rats and two chests at the end and another way to the right. Be wary of basiliks...
