Maybe something I did, or the phantom I summoned did, might help you.
One critical attack this boss does, is the grab. Instead of rolling to the side to avoid it, roll backwards. It took me time to realize that.
Another critical attack is the spin. Avoid it like the plague.
Apart from avoiding those two attacks, there's nothing more anyone can advise, except to roll and dodge when you're not sure.

1. She's weak to dark so if you grab the deep battle axe from under the dragon and +3 it, it will help a ton.
2. Get Yoel and have him give you the 5 free levels. You start this by talking to him on the edge of the broken bridge before the gate that opens to undead settlement. Get the 1 point in hollowing from him and then kill yourself 15 times. This makes Yuria of Londor show up. Obtain 12k souls and buy the dark hand from her. STEAM ROLL about 30% of the game.
For the fight: Time your rolls and stick to her booty like glue. Don't be scared of getting hit you have to learn somehow.
I prefer method 2 because even though it costs 12k souls (I understand this is a ton for some people) there is no stat requirement and stamina costs are stupid low. Just mind the short range and you're good.
I try this, but it tends to cause her to use some quick 180 degree attacks to tag me, and then spin around a lot. I'll try to stay behind there best I can next attempt.

She loves to swing from the right side. When she starts the sword spins, just run behind a pillar. Try not to roll backwards cause even if you dodge the 1st sword, the 2nd will more then likely hit. When she gets the 2nd sword and does the jump attack, do not rush in for the hits like you would the 1st phase. That one move always got me cause I always forgot about the after spin.
Last but not least. While I would never say use a shield. There is one move she does where one would come in handy. When she does the double stab towards you. Blocking it causes her to recoil and you could get a few hits in.
