Option 1: Focus on survival and go for the head.
Don't over-commit: 1 hit and then dodge. Eventually the thing will stagger from getting bonked on the head and that's when you can deliver a powerful critical to finish it off.
Also: always dodge in the opposite direction of where its going to bite.
Option 2: Bleed.
The bastards are made of soft skin and fur and bleed procs on them easily. Bandit Dagger does a surprisingly quick work on them.
Carthus Rouge can work too.
You just need to survive until it staggers and then stab it.
With a fire dagger, preferably.
In DS3 there is a New Game+ option, which restarts the game with stronger enemies. This goes on up until NG+7 or 8th playthrough, where mobs reach their maximum power and stop. The ultimate challenge.

ya but when I go back on the bridge, it's not there anymore. Tried to spawn at the bonfire before the bridge, still not there.
if you can use Dorhy's Gnawing you already got access to it and it works well too.
