As for Steel Protection, again that depends on if its for PvE or PvP, PvE its quite decent really, absorbs a good chunk of physical damage, PvP however its a waste of slot, many better rings can grant more.
Wolf ring is good if IT lets you pass the poise needed to trade with something bigger.
Like you dont have enough poise to trade with a greatsword without it so you use it to be able to do that.
To use it well , you need to know the poise values needed to trade with weapons so you know when its worth using.
Both of those have pretty good uses.
Also there is poise slave build that will require wolf ring +3. With 58-59 poise greatsword can poise through ULTRA greatswords and ULTRA greatsword can poise through ANYTHING.

Only way not to get backstabbed is by not attacking or playing very erratically, but UGS swings aren't exactly the fastest.
Estus, Sun Princess and Obscuring are good situational switches. There's surprinsingly a good amount of medium shield turtles that keep encircling you when ganking, so I swtich in a Patches Horse ring occasionally (most mediums can be disarmed by one kick, some needs two, so the horse ring).
If you are crazy about switching, the tearstones and lloyd's can be used. But I only bother with them on my not-twinked low level.
