you know... not related to the topic, maybe a bit since it's about a NPC, but the crestfallen, the one that deserted the farron legion... that guy is way stronger than his late comrades (and shorter as well... is that why he deserted?). and he can use estus! why can't the warrior from farron legion use estus? aren't they undead as well?

Maybe not all undead have estus flask with them? It's not like it's given to them. In Dark Souls 1 and 2 it's given to you later in the game, in Dark Souls 3 it's apparently was with you inside your grave.
Either undead legion were not so lucky, or they forbid such a dishonorable practice or they simply forgot with being corrupted by the Abyss and all.
The guy isn't that much stronger than them, it's just he uses PvP mechanics such as locking you into 2-hit combo, something that bosses don't have. He also doesn't have an epic moveset of leaps and break-dances.
Also he might've not became the real Abyss Watcher. Maybe he still was in training and didn't got his share of Wolf's Blood?
