Sellsword Twinblades, starting equipment for the Mercenary. Best early weapon on my opinion. Up dex for a while and you be fine.

Use a straight sword (e.g. Broad Sword) and/or Claymore, infuse each with a Raw gem, and dump your points into Vigor, Endurance, Vitality. You can still buff a Raw infused weapon.

Don't give up so fast. Try starting class knight. Best class for beginners.
Then follow quacksouls advice.

Faith build can make this game pretty much easy mode

Get the Claymore from the very first area, then get the Farron Coal from the Crucifixion Woods and infuse it with a heavy gem (meaning it will get pure strength scaling). It's a quality weapon (str and dex) but a strength build means less skill points being distributed. Hawkwood, the crestfallen warrior in Firelink Shrine will give you a heavy gem after you beat the Curse-Rotted Greatwood or the Crystal Sages, or you can just kill him for it. There are also a few crystal lizards in early game areas that drop heavy gems, but getting it from Hawkwood is the easiest way to get a heavy gem. When the time is right (with enemies or in a boss fight) two-hand the claymore and go to town. It will do really good damage and it can stagger enemies pretty well.

This video shows how to get the Claymore, but don't fight every single freaking enemy like they did. Also the dragon will be setting that place on fire so do it fast (somehow the guy in this vid killed the dragon). Just speedrun to the claymore. If you die, it's no big deal. You'll get plenty of embers in your playthrough (if you're embered when you do this). As long as you get the claymore you're good. If you can open up the shortcut though before you get the claymore that'd be good.

there's so much to learn, it's kinda nice. I've never played a souls game before so I barely understand what most of everything does or means, but I guess learning it all is part o'the fun, lol. thank you fer the good description.

I like your review. Maybe it's just not the right game for you. But on the other hand I hope you'll give it another try. I really wish you can get into it and enjoy it after some time.
