If you're ever unsure then check the scaling. If they're both something like D/C for strength and dex respectively, then it's a quality weapon. Infusable weapons don't matter as much since you can make them refined, but some weapons such as rapiers and murakumo do kinda bad quality infused.
I usually 1 hand the weapon, thats the best way to roll catch someone in PVP! but i also can wield it 2 handed, block/tank the first attack on me and follow up with a r1 combo. I love the moveset of this weapon and have hundreds of pvp hours with it in DS1.
Like Bully Hunter said, quality is both strength and dex, usually they're the exact same. For example, a meta quality build is 40/40 for dex and strength. The gem for quality builds are the refined gems.
Definitely. Funnily enough I'm doing a quality build on my most recent character, and the Wolf knight greatsword is one of the weapons I plan to use. Though I'm mostly using the old wolf curved sword at the moment.
