forget what I just said . . . better way to counter that is to go through the second path, not the first.
That is not really a better way than running or dodging, shields may hold the damage but you can be pushed backward and fall on the ground leaving you open without stamina.
If it is the barrage at Ringed City, just move to the next protection untill you get to the last then kill the summoner with arrows (remember to kill the 2 skeletons that will come for you, or else you are screwed).
Flynn's Ring. So I am under 30 % equip load and can run very fast, recover stamina fast.
That works for low level even on ng+7.

And yes, I forgot Aldrich have a barrage . . . just running or rolling.
SL 40 solo on ng+7. Every time with Bandit's Knife.
I use two: for first stage with Cathus Rouge, in second stage a blood infused, because there is less time to use resins.
And yes, week to bleed and fire.
Aldrich is a guy. And the meat puppet he's eating that you actually see with arms and a head is also a guy.
If you can't tell what's happening, before entering the boss fog listen very carefully. You can hear Aldrich eating Gwyndolin.
Aldritch is very weak to fire, even with an un-upgraded Pyromancy Flame it still does great damage. Witches Ring, Saint/Deep Ring/Darkmoon Ring, Dusk Ring for additional casts or Great Swamp Ring, or Scholar's Ring if you somehow have that before this, and Fire Clutch Ring.
Keep a Pyromancy Flame in your main hand, and the Bellvine Saint Chime in the other for additional cast-speed. Spam GCFO when possible and you'll end him in 2-3 phases, keeping near his front keeps him from teleporting and wanting to stay active with attacks.
Keep 1 Normal Estus, make the rest Ashen.
