Why is the coiled sword lodged in Iudyx Gundyr?
Is there an explination or theory behind this?

simply put:
You're an Ashen One, those need a firekeeper and a bonfire to do their job
Gundyr's job is to test your worth: Why wouldn't he have the sword?

my guess is that initially they wanted to make the game very differently. what with that early trailer where a knight drags a corpse around and then sticks a coiled sword in it and it becomes a bonfire.
they made gundyr with the coiled sword stuck in him for some story reason I guess, and then they decided to just give the game the same story of DS1 (more or less) because it was easier, but left gundyr like that because why not.
I also think that the "pus of man" enemies were supposed to be important in the story, tied to something bigger. in the final game they are just those very strong enemies that are there for some reason, with no explanation of why they transform into something resembling a dragon.

Originally, Iudex Gundyr was supposed to be King Oceiros, which would have tied the Puss of Man to him (it's also the reason there are multiple of them in his garden). Probably they would have been a butchered attempt to turn into dragons, before they decided to make Oceiros into a Seath like creature.

Youtube vids call him the judge as a theory, but literally everything about dark souls is "theory" with only a few set in stone stuff the devs say. But the Judge theory is pretty cool. He was woken with the same purpose as you but his Firekeeper was long gone. So he stands there testing other Ash to take on the journey.

Iudex = Latin for ''Judge'', so the judge ''theory'' seems pretty set in stone.
