Conyx really did turn into a woman
Ok so after I presented him Quelaana's tome, he said he couldn't accept it and that he wished he was a woman. Then I summoned Great Swamp Cuculus and got Cornyx's set. This means that Cornyx went and became a woman so that he could learn Quelaana's pyromancies.

But I don't understand how he did it because even Rosaria can't change your gender in this game. So, either he went to Drangleic or he's actually wearing Gwyndolin's Reversal Ring and he's not actually a woman but a transsexual.
