I think you simply need to have both versions on your storage drive (C: example), and change the name of a single folder (effectively swapping the paths).
1. Modded DS3 -> C:\Steam Library\steamapps\common\Dark Souls 3 modded
1a. Rename the Dark Souls 3 modded folder to "Dark Souls 3" when you want to play the modded one
1b. Rename it back to "Dark Souls 3 modded" when you want to play the original game
2. Original DS3 -> C:\Steam Library\steamapps\common\Dark Souls 3
2a. Rename Dark Souls 3 folder to "Dark Souls 3 Original" whenever you want to play the modded one
2b. Rename it back to "Dark Souls 3" when you want to play the original game again.
With this setup you may launch original DS3 from Steam, and whenever you want after changing the folder names-- play the modded DS3 from Steam.
