Ashes of ariandel adds the pvp arena, 1 descent boss fight ( as well as a fairly meh one) some nice weapons and is considerably shorter.
From a lore/story point of view the end of the ringed city won't make much sense unless you have Ashes of ariandel but it shouldn't make too much of a difference.
If you don't care about the story that much, and if you only want great level design, with great epic bosses, then buy ringed city first..
However if you want the full story content, then play Ashes of Ariandel first, wait till you have enough money for Ringed City and then play both of them.
Yes, both have the Undead Match. For AoA, you need to kill a boss. For Ringed, you need to complete someone's questline. Doing either one of these nets you access to PvP arenas.
