Where did you test? Against players?

Not all attacks of curved greatswords can be parried:

One-handing - all attacks except for jump can be parried
Two-handing - only light, running and rolling attacks can be parried.

Yes, all curved GS 2h heavy attacks are not parryable.

Edit: just realised you was asking about all GS, not just curved, so in that case NO, only curved GS.

Curved greatsword 2 handed light attacks can be parried unless they recently patched it.

They have the same parry rules as straight great swords.

Only ultra greatswords , hammers and axes have unparryable 2 handed light attacks

Exiled GS can be parried. Need to time it a bit late.

Greatsword heavy attacks can be parried. Curved greatsword heavy attacks can not. Correct me if I'm mistaken.
