Though the number of Dark magics in the game are few and, for the most part, aren't really all that good, and this is coming from someone who loves using sorcerires. But this is just my opinion of the topic.
Honestly that's the best way to play until then for hexers. Since both Pyromancers and Hexers rely on both intelligence and faith for their damage it's the best way to have that caster playstyle before you get your first hexes.
I believe you get your first offensive hexes after the Cathedral of the Deep boss fight (dark sorcery), when you give Irina the Deep Braille Tome (dark miracle) and when you defeat the Catacombs of Carthus boss fight (dark pyromancy), which can be early-mid game.
Those enemies are called Pus of Man and according to the lore the pus is the abyss that tainted some of the undead. I agree with the design being more RE than what you would see in DS but that's basically what they are.

Archery, Almost all sorcery, all dark magic, (Except pyro) Daggers, Almost all miracles if your build isn't perfect.

You can't, there are only two 'hex' spells you can get until siad vendor who sells them. Even then ...yeah they generally are not as powerful as using the normal school's spells. Except pyro's dark spells, which seem to combine well with the 'normal' pyro spells.
