R1 spam with longswords for instance. its effective so they don't even try to use the weapon any other way.

Sure, it's easy to just run R1 a bunch, but players will grow savvy and start dodging it after a while.
You can fight cleverly with any weapon but a bad or lazy player will just use them in the simplest way which is not as good, its just easier. This is truth from experience and im not badmouthing those systems, just stating why people use them.
Parry spam is the same, a good player usually won't spam, but a bad player needs to spam.
