As beginning tip: crystal falmberg does a lot of damage and can be farmed after only killing Vordt
Seriously though going mage (I assume you mean a sorcerer - or are you talking more about an omnimage kinda character?) kinda sucks until you have some gear and levels. The effective approach is to use a raw weapon and buff it with one of the magic weapon spells and just kinda forget what you actually want to play as until you have a bunch of Int and Atn and access to the better spells and gear.
Great Heavy Soul Arrow is pretty much the best sweetspot of damage, stagger and FP cost. It's the bread and butter spell for going through areas. It's also obtainable pretty early on. Just the basic Sorcerer Staff is alright, at around 50+ Int (which you definitely want) the Court Sorcerer Staff becomes worth using instead. The Crystal Sage Staff is a honorable mention as it deals more damage when the weaponart is active, but less otherwise. The kicker is that you can cast the weaponart, wield another staff in your other hand and the weaponart will affect BOTH staffs so dualwielding the sage and the court staff is very viable.
Other noteworthy equipment is the sage ring or an offhand bellvine chime or whatever that thing is called (or lots of Dex investment, but that isn't viable early on tbh).
Ring-wise the Young Dragon Ring (that you start with if you pick Sorc which you don't have to, Pyromancer for example is also a good starter) and Bellowing Dragoncrest Ring for obvious reasons. In PvE the Magic Clutch Ring is good, too. Other universally useful rings are stuff like Ring of Favor, Prisoner's Chain, Silvercat Ring,...
The Crown of Dusk will affect normal sorcery damage and there's also a dark equivalent, can't remember the name. Both are NOT worth using in areas where other mages/hexers are because of the noticably dropped defense.
An offhand Scholar's Candlestick boosts your spell damage aswell and is a useful alternative to the mentioned sage staff.
Against enemies resistant to magic you want to whip out a) dark sorcery or b) pyromancy.
Good backup weapons are light and fast low requirement weapons such as a Longsword, Handaxe, Thrall Axe, Mace,...
Your goal are 60 Int and 30 Atn. You're gonna be kinda squishy with like 27 Vigor and maybe 20ish Endurance, unless you keep leveling further and further, but that's something you have to deal with. Luckily a mage's power and range makes that pretty easy.
Another noteworthy option is wearing the Slumbering Dragoncrest Ring and casting Hidden Body. It'll allow you to bypass like the entire PvE or poison them without pulling aggro (Storyteller Staff is recommended for this) and then you can just whack the boss with full Estus and all that good ♥♥♥♥.

Step 1: Disregard spells entirely they're all ♥♥♥♥.
Step 2: 60 INT
Step 3: 30 Vitality (Carryweight)
Step 4: 40 Poise
Step 5: Become Unstoppable.
Step 6: Trade R1's with just about everything, add wolf ring+3 if you need to get past halberds and one handed ultras.

I also included a lothric sword and silver board so you can whip out the meta if you need it.
As for what to level early, level HP. Get to 27 points in HP, and then go for moonlight greatsword minimal stats. Use the knight classes' starting weapon armor and sheild till you get the moonlight, a lothric sword, silver board, and lapp's armor.
Endurance I've left at 9 and seems fine.
Attunement to 24.
Intelligence to 60 ASAP.
Around SL60
Hitting hard with spells, free aim from distance is your friend.
I'd get annihilated in PvP.
I always go sl 125. Plenty of summons for PvE and PvP at this level.
