Knight is a starting class, doesn't really imply a build/loadout per se after SL30. Is this going to be a meta level build? And you want to use a light curved sword? Scimitar would be fine, move set is good. Falchion would have more range. Demon Scar is much more versatile for a melee caster, though, opening up way more options for mixed attacks and spells, and is also super light. A/S tier weapon IMO. Not sure why PKCS is not an option though - can you explain?

I've noticed many people with similar builds tend to use dark infused weapons for maximum damage dealing, and since the PKCS cannot be infused I figured it might be for different types of builds than what I'm going for. Am I wrong?

Can't watch video but description reads "Ultra Greatsword" so IDK; stats allocation for a UGS rather different than for a light weapon like DS/Scimitar/PKCS. Without details I'd say yes, it would be viable, but playstyle much different.
Best infusions for Pyros are Dark and Chaos. Dark is better for chip damage, Chaos for crits, otherwise damage output is the same (before defenses). Neither DS nor PKCS can be infused, but that doesn't make them non-viable. Depends on what you want to do.
