Pick any weapon that requires strength.
If only there was the DS2 chicken nugget in this game..
Dragon Slayer Greataxe: 736 AR (with split damage)
Black Knight GA (buffed): 703
Yhorm's Great Machete (buffed): 778
Unless the weapon specifically scales with Dexterity, the only reason to get 40-50 dexterity would be for the sake of speed. The rate at which one attacks/acts is influenced and capped at 50 dexterity.
And nope, dexterity doesn't increase the speed of attacks or anything else besides spell casting speed.
Black Knight GA is actually a bit better on a quality build, reaching 739 AR with warcry. Also the standard Greataxe when heavy infused with warcry reaches 753 AR.
I don't think Yhorm's would be the best option unless you want to 1-hand it though, since like the Great Machete the R1 doesn't combo when 2-handed. Though it doesn't really matter if you're just doing PvE.
Edit: Also forgot Ledo's, which I believe reaches 732 AR with the weaponart on a 66 strength build.
Also its doubly great if you're as scantily clad as the Pillar Men
I know. Though thankfuly Fextralife says how much AR the weaponart adds, which is apparently 7.5%. Used that and the unbuffed AR to work out the max damage.
