Sharp gem drops
I had to farm several sharp gems for a build, since there are only 2 in the game without farming more (thanks from), and here are my drop rates for anyone interested.

I farmed using 357 item discovery, repeatedly killing the two near the catacombs bonfire and using a coiled sword to reset after each trip

200 kills

6 sharp gems (3%)
~7 shackles (3.5%)
15 carthus shields (7.5%)
23 carthus curved swords (11.5%)
~18 large titanite shards (9%)
100+ titanite shards
embers- not sure, didn't have a good count before starting. Seemed to drop roughly similar to large shards or maybe more often

A few times I had 3 items drop from the same kill (ex carthus sword, shield, titanite shard)

Sharp gem drops were on runs 26, 35, 50, 74, 78 and 100, meaning the fastest drops were within 8 kills and the longest gap in drops was 52 kills.

Obviously the sample size is too small to take these numbers as absolute, but it does give a rough idea or could be added to a larger dataset.

Mm if you're able to easily kill the Corvian enemies in Ashes of Ariendel drops from them are faster. Bonfire to the corvian settlement bonfire, drop down into river and kill the corvian. homeward bone/coiled sword to bonfire. Run w/gold serpent ring (+3 if available) symbol of avarice and crystal rapier in offhand (or mainhand if you're running that I suppose :P) and they'll drop without too much trouble..provided again that corvian assassin isn't a pain for you to kill. It's not an "ultra rare" drop like it is from the enemies in Carthus.

Yeah, the DLC's added an extra enemy you can farm for more gems. This includes sharp gems (corvian knights), heavy gems (millwood knights), blessed gems (Ringed City clerics), dark gems (Harald knights). They're the gems I can think of from the top of my head.
