2. Dodge. Don't try to break their poise and simply damage them when they DON'T swing.
3. Range them or just play caster. For example Dorhy's Gnawing is 25 faith and can bleed even the toughest regular enemies if you spam it from a distance. You can cheese the game and half the bosses with it. Evangelists, Cathedral Knights, Lothric Knights, Winged Kngiths... It is broken.
Secondly, no Evangelist block your path in the game. In the Cathedral there is one near the first Giant after a ladder, which I think is the one you are referring to. The area above the ladder is optional.
The best way to fight them without ranged is rolling through their attacks and circling behind them. When they finish their two-attack combo, go ahead and backstab them. Repeat until victorious!
Dodging can be a little tricky if you are inexperienced, but I'm sure you'll be able to do it in no time. Just make sure not to roll too soon, or your invincibility frames will have passed once the attack connects.
