Can someone explain what the WA from Saint's Talisman actually does?

Not much, it has the lowest Hyper Armor of any talisman, there are better choices. You can have your guard broken by 2 R1s from a straight sword. I would personally go with the normal Talisman. It's a happy medium between poise and damage.

It's technically the Sunlight Talisman, but all the extra poise is completely unnecessary and not worth the damage dropoff. Check this link out if you're curious about how the various talisman stack up
