You can never go wrong with the LKS, if your stats support it.
You can either put your next 4 levels into DEX or you go to "Rosaria's Bedchamber" (Cathedral of the Deep, Cleansing chapel, leave through the last shortcut, but turn left and take the elevator up, follow the way inside, go over the rafters and drop to the left, on the position with the Greatsword Cathedral Knight)
You need a Pale Tongue to offer and you can change your stat allocation up to five times per playhtrough.
Irithyll SS primarily scales with STR but it's always sub-par in terms of raw damage output because it inflicts Frostbite, and it's not the best way to inflict Frostbite.
Commit to a STR build. 66 STR.
Also we don't know your other Stats/Soul Level.
I also can't decide wich 2 of these weapons to use, but I really want to get a greatshield later in the game, so I probably go with strenght and with irythril straightsword
Use a Heavy-infused Long-, Broad-, or Dark Sword. Which one is mostly preference. Broadsword is short, lacks a thrust attack, but deals the highest damage and is easy to obtain. Dark Sword is long, has no thrust either, is a bit more stamina-hungry and I believe attacks slightly slower and deals almost almost as much damage per hit, but its dps is lower - it also has to be farmed and depending on your luck that might take some time. Longsword has a thrust, is a bit weaker, also very easy to get, has "normal" range and is the arguably best option, but really it's mostly preference. You'll almost always just use onehanded light attacks in PvE.
