It's literally up to you since starting class means almost nothing. Do a little bit of research

Well, if you are a new player and want help with invaders, I'd say "Way of Blue" covenant. Other than that if would depend what ring(s) or spell(s) etc. I need for the build in question (not the class of the build).

Example:
Say I was doing a faith build and I wanted to be able to buff my absorbtion and increase AR, I'd use the "Warrior of Sunlight" covenant to get sunlight medals to trade in for Sacred Oath.

It really would depend on what you are looking for and your playstyle rather than your character class.
