To be honest, I just feel better knowing that Im using weight to the limits of 70% rolls.
But when I want cosplay, I use sunless legs, dancer top and exile gloves with claymore/stormruler for Saber cosplay :3

Just buy them. They are both fun imo.
If you have the stats for it, use the silver knight set.
Format (scores are out of 1000):
Item - Weight - Defense Score - Poise Score
Defense score gauges the combined Physical/Strike/Slash/Thrust absorption efficiency relative to the weight of the item. Poise score does the same for poise. Max score possible is 1000.

It's all going to depend on your weight allowed (do you want fast roll or normal roll) and weapon (does it have poise frames or not). In general if you're going for normal roll and therefore have a lot of weight to spend, it's hard to go wrong with Lapp's set. Its poise is sufficient and defense exceptional. Fast roll can benefit from shadow set with brigand chestpiece.
It's actually a bit obnoxious, there's all these great looking medium armor sets, but if I'm normal rolling I'm typically so flush with weight I can throw on most of Lapp's, whereas fast rolling I feel starved for equip load.
