I think the "High Wall of Lothric" bonfire is your best choise. There are two soldiers on the way to the tower with the dead dragon on in. One inside the tower behind boxes and one above. Plus the enemies around there are no threat whatsoever.

Fastest way is probably to get a friend to roll a Thief and drop it for you, it starts with one.

Just stack up high discovery right before engaging / killing the Iron Round Shield wielding hollow (even with low Luck stat and no unique items, just eat rusty coins you can buy from Patches in rapid succesion and then kill).

Commented on this old thread just becuause I had same problem recently (non-thief start, got trolled twice trying to get it from another player for embers n stuff) and this pops up as first in google search.
